Description

Bigallet China-China Amer Liqueur is a French bitter orange liqueur with deep citrus, caramel, spice, and herbal complexity. Made from sweet and bitter orange peels macerated in sugar-beet neutral alcohol, then redistilled in alembic stills with aromatic plants and spices, it lands somewhere between orange liqueur and French amaro. Bottled at 40% ABV, it is excellent in stirred cocktails, spritzes, and Sidecar variations.

Producer

Bigallet was founded in 1872 by Félix Bigallet in Lyon before later moving to the foothills of the French Alps in Virieu-sur-Bourbre. The house has long produced syrups, liqueurs, bitters, and aperitifs, with China-China tracing back to the original Bigallet family recipe from 1875. Today, the bottle remains one of the producer’s most distinctive releases, known for its bitter orange depth and alpine-French heritage.

Cocktail Suggestions

Bigallet China-China Amer Liqueur is a strong fit for a Sidecar variation with Cognac and fresh lemon juice. Used in place of standard orange liqueur, it adds bitter orange, caramel, spice, and herbal depth while keeping the cocktail bright and structured.

It also works well in a Brooklyn variation with rye whiskey, dry vermouth, and maraschino liqueur. China-China can stand in for Amer Picon, giving the drink bitter orange, gentian, spice, and a darker herbal finish that makes the cocktail feel richer and more complex.
