Description

Cocchi Barolo Chinato is a Piedmontese aromatized wine made from Barolo DOCG and infused with cinchona bark, rhubarb, gentian, cardamom, and other botanicals. Rich Nebbiolo fruit, bitter herbs, warm spice, cocoa, dried cherry, and orange peel create a deep after dinner profile. Bottled at 16.5% ABV, it works beautifully chilled, with chocolate, or in stirred cocktails.

Producer

Giulio Cocchi was founded in Asti, Piedmont in 1891 by a young pastry chef from Tuscany. The house became famous for aromatized wines, including Barolo Chinato, Americano, and Vermouth di Torino. Cocchi says Giulio created an original Barolo Chinato recipe and helped popularize the category, giving the bottle a direct link to Piedmont’s wine and aperitivo traditions.

Cocktail Suggestions

Cocchi Barolo Chinato is a strong fit for a Manhattan variation with rye whiskey and aromatic bitters. Used in place of sweet vermouth, it adds Barolo depth, cocoa, bitter spice, and dried red fruit, giving the cocktail a richer and more digestif-style finish.

It also works well in a Negroni variation with gin and a red bitter. Barolo Chinato brings wine structure, cinchona bitterness, rhubarb, spice, and dark fruit, creating a more brooding version of the classic while still keeping the bitter-sweet balance intact.
