Pernod is one of the historic names tied to absinthe’s rise in France. In 1805, Henri-Louis Pernod helped establish Maison Pernod Fils in Pontarlier, which became one of the defining absinthe houses of the 19th century. After nearly a century of legal restrictions, Pernod reintroduced an absinthe-style spirit based on its traditional recipe.
