Pernod traces its roots to 1805, when Henri-Louis Pernod helped establish one of the defining names in French anise spirits. Today, Pernod remains part of Pernod Ricard, the spirits group created when Pernod and Ricard joined forces in 1975.

Pernod Pastis is a natural fit for a Mauresque with cold water and a small measure of orgeat. The water opens the anise aromatics, while the almond syrup softens the licorice and fennel notes for a classic southern French aperitif serve.

It also works well as the anise rinse in a Sazerac with rye whiskey, sugar, Peychaud’s bitters, and a lemon twist. Used in a small amount, Pernod adds a bright licorice snap and herbal lift without overpowering the whiskey’s spice and oak.
